On Saturday night at TESSA's 2011 Pasta in the Park, the El Pomar Foundation Bad Apples team competed for three awards: Best Presentation, Best Sauce, and Most Original Sauce. The team spent months of preparation selecting the recipe, arranging decorations, and planning for the day of competition. After cooking up an Apple Curry Pasta Sauce, the team's hard work paid off when they won the award for Best Presentation.
Here's the award-winning recipe:
Apple Curry Pasta Sauce Recipe
1 large onion, diced
1 large organic apple, cored and diced
1 1/2 cups of unsweetened organic applesauce
2 cups organic apple juice
1/4 cup organic butter
2 TBS chicken based demi glace
1 clove of garlic, crushed
1 1/2 TBS ground curry powder, or to taste
3 all natural and/or organic apple chicken sausage
Salt and pepper
Brown sausage in a skillet over medium high heat in a small amount of olive oil. Set aside to cool.
In the same skillet, melt butter over medium heat. Cook and stir onions and apples in butter until caramelized. Stir in applesauce, apple juice, chicken bouillon, garlic, and curry powder. Season to taste with salt and pepper.
Chop sausage and add to sauce. Heat until serving temperature.
